i made a pretty healthy hotdish tonight. i was craving something flavorful and healthy, but easy and quick, since i was lazy. my creation turned out pretty good, though next time i will add fresh steamed veggies to it. the recipe that follows is an approx. of what i did, since i just threw in what looked right.
ingredients:
2/3 cup brown jasmine rice
1/2 cup lentils
1 can garbanzo beans
1 can french onion soup
1 cup water
2.5 tbsp cayenne pepper
1.5 tbsp basil
1 tbsp garlic salt
1 tbsp cumin
1 cup provolonedirections:
mix together rice, lentils, beans, soup, and water. add in cayenne pepper, basil, garlic salt, and cumin. boil until only a little liquid remains.
place into 9x9 casserole dish. shred provolone on top of dish. bake at 3500 20 minutes.
